Class Schedule

Friday, April 17

  • 3:00 PM — Welcome social
  • 5:00 PM — Dinner
  • 6:00–10:00 PM — Evening session: trimming, prep, injections, theory, timelines

Saturday, April 18

  • 8:00 AM — Cooking begins (all four meats in real time)
  • 12:00–3:00 PM — Turn-in box presentations, flavour strategy, judging insights
  • 3:00–4:00 PM — Q&A, open discussion
  • Evening — Social gathering (optional)
